Not all Cinnamon is equal. Cinnamon Cassia is the variety sold widely as Cinnamon in most stores which is darker in colour and has a more bitter flavour. Cinnamon Verum (Latin for true) or Ceylon Cinnamon is lighter in flavour and has a sweeter aroma and flavour. Cassia Cinnamon contains larger quantities of coumarin, a naturally occurring compound which in excessive quantities may have unpleasant effects. The European Commission has a maximum limit of 2mg/kg of coumarin in food and beverages.
History of Cinnamon
One of the world’s most important medicinal spices, Cinnamon has been in use by humans for thousands of years — as early as 2,000 BC. Ancient Egyptians employed it as a perfuming and preserving agent during the embalming process, and it was even mentioned in the Old Testament as an ingredient in anointing oil. It is a treasured spice and was once more expensive than gold.
Our Ceylon Cinnamon
Organically grown in Sri Lanka (formally known as Ceylon), which has a favourable climate and ideal soil conditions for growing Cinnamon. Cinnamomum Verum, which is the scientific name for Cinnamon, is the inner bark of the cinnamon tree, which is dried and ground in to a powder. Our Cinnamon powder is freshly ground and packed immediately to maintain the oils and does not contain any fillers, additives or preservatives and is not irradiated. (*Irradiation is a process that uses radiation to kill bacteria and extend the shelf life of food. Radiation doses vary for different food stuffs, however the dose limit for spices is usually higher because they are consumed in very small quantities. Irradiated cat food has been banned in Australia since 2009).
