A great on-the-go breakfast cookie packed full of nutritious, satisfying ingredients.

Ingredients
 1/2 cup coconut flour
 1/4 cup almond meal
 1 cup shredded coconut
 1 tsp baking soda
 1 cup oats
 1/4 cup pumpkin kernils
 1/2 cup sultanas
 1/3 cup chopped Changing Habits Dates
 1 banana
 1/3 cup coconut oil melted
 4 tbsp water
 1 tsp vanilla essence

Preheat oven to 170 degrees Celsius.

Combine coconut flour, almond meal, shredded coconut, sugar, cinnamon, baking soda, oats, pepitas, sultanas, dates and mashed banana in a bowl and mix well.

Add the melted coconut oil, vanilla and water and mix through with fingers. Roll a section of the mixture into a ball and if it falls apart easily you may need to add a little more coconut oil.

Begin to gently roll the mixture into balls and flatten down with fingers to create a cookie shape on a lined baking tray. The mixture should make approximately 10 biscuits.

Bake in the oven for approximately 15 minutes until golden.

Remove and cool.

    Hi No dates included in recipe. Also what can be substituted for the banana? thanks

      Hello Kate, dates are listed in instruction 2 to be added with the flours, sugar, banana, etc. Instead of banana you can use an egg or stewed apple.
