Caramelised Fig, Goats Cheese and Macadamia Salad

A beautiful combination of caramalised fig and goats cheese with the crunch of roasted macadamias. A great side dish to serve with pork belly or chicken - or just enjoy on its own!

 1 cup broccoli, chopped
 1/3 cup macadamias
 2 tbsp coconut oil
 5 figs, cut into quarters
 2 cups rocket
 150 g goats cheese, crumbled

Preheat oven to 180 degrees celsius.

Place the chopped broccoli and macadamia nuts in a small baking tray and add 1 tbsp of coconut oil and a pinch of salt and mix well. Place in the oven for 15 minutes or until the macadamia nuts start to brown.

Heat a frypan over a medium heat and add 1 tablespoon of coconut oil and the rapadura sugar and stir until it creates a paste-like consistency. When heated, add the figs and fry for about 1 minute on all sides. Set aside.

Once all of the ingredients have cooled, combine in a large bowl with the rocket and goats cheese.

Optional: If you would like to add a dressing, mix 1 tablespoon of coconut aminos or tamari with a good squeeze of lime juice to serve.
