Chicken Soup with Pumpkin, Ginger & Turmeric

 500g chopped pumpkin
 2 shallots, chopped
 1-2 Tbsp grated ginger
 1 head of broccoli, chopped into florets
 1 bunch coriander, leaves and stems chopped (save some for garnishing)
 3 kafir lime leaves
 1 organic whole chicken + 2 chicken frames
 3-4L filtered water
 2 generous handfuls of spinach
 Juice of 1 lime
 1/2 tsp cracked Changing Habits Pepper
 1 Tbsp butter or coconut oil

Heat a large saucepan to medium heat and add the butter or coconut oil to melt.

Add the whole chicken and brown it on all sides.

Add the rest of the ingredients (except lime juice and spinach) and bring it up to a boil.

Once boiling, turn it down to a soft simmer and cook for 2-4 hours or until the meat begins to fall off the chicken.

Once it is ready, taste and add the spinach leaves, lime juice + more salt and pepper if needed.

Ladle into bowls, top with extra herbs and enjoy!
