Creamy Cauliflower Soup

Warm up with a bowl of this flavoursome, creamy cauliflower soup! You can omit the bacon if you like and serve with dukkah and/or extra herbs.

Ingredients
 1/2 tbsp grass-fed butter or coconut oil
 2 cloves of garlic, crushed
 1/2 brown onion, diced
 1 large cauliflower, stems removed and chopped
 1 medium potato, peeled and chopped
 2 tbsp Changing Habits Vegetable Stock Powder mixed with 1 litre of filtered water
Optional garnish
 2 rashers of bacon, diced and fried over a high heat until crispy
 2 tbsp dukkah
 2 tbsp chives, diced
 2 tbsp sour cream

In a large pot add the butter or coconut oil, onion and garlic and cook until soft and fragrant.

Add the prepared cauliflower, potato and vegetable stock liquid and bring to a boil. Turn down to a medium-low heat and simmer for 30 minutes or until you can slice through the cauliflower and potato easily.

Carefully pour the contents of the pot into a Thermomix or blender and add salt and pepper to taste. Blend until smooth.

Bacon, dukkah, chives and sour cream make a great garnish for this soup and provide an extra pop of flavour!
