Gluten-Free Double Choc Cookies

Nut free, gluten free and dairy free, these cookies will be a winner for just about anybody. A great inclusion for the school lunch box to beat those mid-morning/afternoon munchies!

 1/2 cup coconut flour
 1/2 cup coconut oil, melted
 1 tsp vanilla essence
 1/2 tsp baking powder
 4 eggs

Preheat oven to 180 degrees celsius.

In a bowl, whisk the coconut oil, sugar, vanilla, salt and eggs and gradually sift in the coconut flour, cacao powder and baking powder and mix well.

Add the cacao chips into the mixture and mix well.

Use a tablespoon to measure the cookies dough and with your hands, roll into a ball and flatten into a cookie shape and place on a lined baking tray and repeat with the rest of the dough.

Bake for 15 minutes, before removing and cooling on a wire rack.
