A refreshing hit of mint with the delicious crunch of the cacao chips - a perfect treat for the warmer months of the year.

Ingredients
 600 ml (20 oz) coconut milk
 1/4 cup honey
 2-3 drops pure food grade peppermint oil (taste test to adjust the amount that you add)
Directions
Ice cream machine

Place all ingredients apart from the cacao chips into a blender or Thermomix and blitz for 30-40 seconds. Taste test to check if you would like to add more peppermint oil and blitz again.

Pour mixture into the ice cream machine and churn for 40 minutes or until the mixture is thick.

Add the cacao chips and stir well.

Place in the freezer in an air tight container until the desired consistency is reached.

Remove from the freezer 10 minutes before serving.

Regular method
