No Bake choc chip brownies

This recipe is ridiculously easy to make and is sure to satisfy those chocolate cravings!

Bottom layer
 1 cup walnuts
 1 tsp vanilla essence
 2 tbsp coconut oil melted
Top layer
 3 tbsp maple syrup
 2 tbsp coconut oil melted
 1/2 tsp vanilla essence

Combine the dates, walnuts, cacao powder, vanilla, melted coconut oil and salt in a food processor or Thermomix and blitz until completely smooth.

Transfer the mixture into a lined baking tray and press down with the back of a spoon or fingers. If the mixture is sticky and hard to spread, place in the refrigerator until it hardens slightly and try again.

Sprinkle the choc chips evenly across the base.

In a medium bowl combine the top layer ingredients until smooth.

Spread the top layer mixture over the base and place in the fridge to set.

When the mixture is firm, remove from the fridge and cut into bite-sized pieces. This is quite a rich recipe so small pieces are recommended.
