Orange Jaffa Cheesecake

What better combination than orange and chocolate? A delicious cacao base with a smooth and creamy filling, packed full of flavour.

Ingredients
Base
 1/2 cup walnuts
 1/4 cup almond meal
 Zest of 1 orange
Filling
 3 cups raw cashews (soaked overnight or for 1+ hours in boiling water)
 3/4 cup coconut cream (use the thick part of the cream and not the liquid)
 2 tbsp coconut oil (melted)
 1/2 cup freshly squeezed orange juice
 1/2 cup maple syrup
 2 tbsp orange zest
 2 tsp vanilla essence
Garnish
 3 tbsp dark chocolate, grated or crushed Changing Habits Cacao Chips
 1 orange, sliced

Preheat oven to 180 degrees Celsius.

Place the orange slices on a lined baking tray . Bake for approximately 30 minutes until lightly browned. Keep checking on them because when they brown, they brown rapidly. Set aside to cool.

Base

Place all of the base ingredients into a food processor or Thermomix and blitz for approximately 20 seconds.

Pour the mixture into a lined cake tin (a shallow one works best). Press down with the back of a spoon. Place in the freezer for 10 minutes, then remove and press down with the back of a spoon again to make sure that the base is firm and evenly spread. Place in the refrigerator.

Drain the cashews. Place all filling ingredients into a food processor or Thermomix and blitz until completely smooth.

Remove the base from the fridge and pour the filling mixture evenly on top, smoothing down with the back of a spoon. Place in the freezer to set for approximately 2 hours.

Remove from the freezer.

Garnish

Garnish with the baked orange slices and sprinkle with chocolate. Store in the refrigerator.
