Rosemary Peach Chicken

A beautifully flavoured satisfying meal. Serve with rice cooked in coconut milk or cauliflower rice for a lighter option.

Ingredients
 1 kg chicken thighs
 2 tbsp olive oil
 juice of 1 lime
 2 tbsp fresh rosemary leaves (plus extra for the garnish)
 cracked Changing Habits Pepper to taste
 3 peaches sliced
 1 cup sour cream
 1/4 cup water
Directions

Rub oil, lime juice, vegetable stock powder, rosemary and salt and pepper into the chicken.

Heat a frypan over a medium-high heat and cook the chicken until golden. Add the peaches for the last couple of minutes.

Reduce the heat to medium and pour in the sour cream and water. Simmer until the sauce begins to thicken.

Serve with coconut rice (rice cooked in coconut milk) or cauliflower rice.

Garnish with extra fresh rosemary.
