Tuna Ceviche Stuffed Avocado

Ingredients
 2 tuna steaks
 Juice of 4 limes
 1 tbsp coconut aminos
 1/2 clove garlic, minced
 2 avocados - halve and scoop out the avocado flesh and dice and leave the shell to serve
 2 tbsp Spanish onion, diced
 1/4 cucumber, diced
 1 tomato, diced
 2 radish, sliced thinly
 Cracked Changing Habits Pepper to taste
 1/3 cup edamame beans
 2 tbsp micro herbs
 2 tbsp sesame seeds

Dice the tuna into small pieces and mix with the lime juice, coconut aminos and minced garlic. Place in the refrigerator for an hour, stirring occasionally.

In a small bowl, add the rest of the ingredients apart from the micro herbs, sesame seeds and lemon wedges and mix well.

Remove the tuna from the fridge and drain the liquid into a small bowl (save the liquid for the dressing).

Mix the tuna with the rest of the ingredients.

Spoon the mixture into the hollowed-out avocados and top with micro herbs and sesame seeds.

Serve with a small amount of the dressing.
