Cauliflower and Quinoa Fritters with a Pear and Parmesan Salad

If you're pushed for time and need to create a healthy meal that is super easy, super quick, tasty and nourishing then these fritters are our go to. What we love about fritters is that they not only taste great but you can change up the flavour of them so easily by adding in other herbs, lots of spices, tomato, smoked salmon etc.

Ingredients
Fritters
 1/2 cauliflower cut into florets
 1/2 broccoli cut into florets
 2 cups cooked quinoa
 1 cup almond meal
 1/2 cup crumbled feta
 1/2 cup grated cheese
 2 eggs
 3 shallots chopped
 2 cloves garlic minced
 cracked Changing Habits Pepper to taste
 1 tbsp olive oil (for frying)
Salad
 2 pears sliced
 large handful rocket
 1/3 cup parmesan cheese
Dressing
 1/4 cup sour cream
 juice of 1 lime
Directions

Place cauliflower and broccoli florets in a food processor or Thermomix and blitz until fine. Transfer into a large mixing bowl.

Add the rest of the fritter ingredients and mix well.

Heat a fry pan over a medium-high heat. Roll the mixture into balls and flatten with a spatula. Cook until they begin to brown on each side and set aside. Continue with the rest of the mixture.

Salad

Mix the salad ingredients in a bowl. Set aside.

Dressing

Combine the sour cream and lime juice. Set aside.
