A healthy recreation of an old favourite. A beautiful combination of coffee, chocolate and cream...this one is sure to please!

Cacao/coffee base
 1/2 cup almonds
 1/2 cup cashews
 3 tbsp coconut oil
 1 tbsp maple syrup
 1/4 cup black plunger Changing Habits Coffee Beans Organic
Coconut cream filling
 1/2 cup cashews (soaked for 2+ hours and drained)
 3 tbsp maple syrup
 400 ml coconut cream
 1/4 cup coconut butter
 2 tsp vanilla essence

Place all base ingredients into a food processor or Thermomix and blitz well.

Scoop all of the mixture into a baking tray and flatten down to form the base, either with fingers or the back of a spoon. If the mixture is too sticky and hard to spread, place in the fridge for 15 minutes before trying again. Place in the refrigerator.

Blitz all of the filling ingredients (apart from the cacao powder) in a food processor or Thermomix until completely smooth. Transfer the mixture into the baking tray and spread evenly on top of the base. Place in the fridge to set for at least 30 minutes.

Sift the cacao powder onto the cream layer before cutting into small pieces.
